Touring sup styles?

hey guys

im thinking of getting a touring / racing sup but I see that there are references to flat water, dug out and downwind styles of sups?

what are the typical designs of each and what are they good for?

i tried an inflatable red paddle co 13'2 x 30 touring sup today and was surprised at how much flex it had. Definitely sealed my plan on getting the 12'6 x 28 elite and more keen on a hard board now although I've never tried a touring hard board for comparison?

I was surprised that the red paddle board wasn't anywhere near as stable as I was expecting (ocean choppy conditions with rolling swell and wind).
i felt like I would've handled my 8'4 surf sup better.
maybe it's just the feeling of a spongy board that flexes compared to instant responsiveness of a hard board?
I didn't fall off, but didn't leave me thinking it was that great for choppy ocean swell.

next bit of info- I would likely use it in the ocean and subject to wind and chop as opposed to just flat water. And perhaps paddled an hour or two long so something not super twitchy
